Dark Bitter Choc' Truffles




Made a small batch of chocolate truffles.

The order called for dark chocolate (the bitter sort), with half a batch infused in rum and the other half in coffee liquor. The balls are covered in cocoa powder for that extra bitterness. These truffles need to be kept in the fridge at all times as the inner layer is very creamy and our climate isn't too kind to truffles of any sort.

Different from an earlier variety of truffles, these bitter choc' truffles do not have a hard inner filling but rather, this variety is decadently drenched in A LOT of liquor (keep away from children!).
