M-m-m-mocha Cake :)



This is one of my favourites - moist mocha cake frosted with chocolate ganache, sprinkled with chocolate bits. The cake's sugar content is reduced to half, to accentuate the mocha taste and to compliment the sweetness of the frosting (frosting has no added sugar). This recipe has been tweaked several times and this is, according to them, precisely the way coffee lovers like it  :)

To ensure that the cake remains moist at serving time, it does not need to be refrigerated (the high butter content hardens the cake and the mocha flavour is subdued if refrigerated). The ganache is "stabilised" to stand at room temperature for roughly half a day without melting into a glossy blob.
